La Zinq's 15 min Restaurant Remake Bowl
episode #10 of healthy in thirty plus a gift guide for the foodie!
The WAY my bank account would empty out each week ordering this bowl from La Zinq, a fixture on the healthy LA fast-casual scene. So, I started recreating a lot of my favorite cult healthy spot dishes at home (with the help of staff, thank you Erewhon and La Zinq!) and I realized a. I was saving a ton of money and b. a lot of my favorite dishes were actually super easy to make with pretty basic ingredients because, news flash, restaurants also need to be able to make them pretty quickly while running a profit on those margins. This is one of my staple lunches that is so yummy, always satisfying and makes use of a few simple ingredients that come together quite beautifully.

Now onto the recipe!
La Zinq Bowl
425 calories, 32g protein, 7.5g fiber per serving
Servings: 2
Ingredients:
8 oz shrimp (or substitute 6 oz salmon, chicken), cleaned and deveined
2 cups arugula
1 roma tomato, chopped (or 1 cup halved cherry tomatoes)
1/2 avocado, diced
Optional: 1/2 cup cucumber, chopped
2 tbsp light mayo
1 tbsp sriracha (adjust for heat preference)
1 microwavable frozen brown rice packet (approximately 2 cups cooked)
2 tbsp shaved Parmesan cheese
Optional: 2 tbsp Gruyère or Comté cheese, diced small
Olive oil spray
1/2 tsp smoked paprika
Salt and pepper to taste
Instructions:
Prepare the Shrimp:
Lightly spray a skillet with olive oil spray and heat over medium heat. Season shrimp with smoked paprika, salt, and pepper. Sauté for 3-4 minutes on each side until shrimp is opaque and cooked through. Remove from heat and set aside.Make the Spicy Mayo:
In a small bowl, combine light mayo, sriracha, and a splash of water to achieve a drizzling consistency. Stir until smooth.Prepare the Bowl Base:
Cook the brown or white rice according to the package instructions. In a mixing bowl, combine arugula and cooked brown rice, tossing gently to mix.Assemble the Bowl:
Divide the arugula and rice mixture evenly between two bowls. Top each with shaved Parmesan, optional Gruyère cubes, tomato chunks, avocado chunks, and diced cucumber (if using). Add the sautéed shrimp.Finish with Spicy Mayo:
Generously drizzle the spicy mayo over the top and gently mix everything together for a flavorful, satisfying bite.
