We hit the four week mark! The theme of this final reset is easy global dishes, with lots of Mexican/South American influences. This means you can consolidate your grocery list and there’s tons of whole foods rich in fiber like sweet potatoes, avocados, black beans, etc.,


I love the chunky chicken salad arepas, but you can easily swap the arepas for toast; the lamb koftas are on my weekly rotation but what takes this dish to the next level is that roasted veggie pearl couscous & a simple harissa yogurt sauce to tie everything together. And then we have sheet pan taco carrot fries (which can be subbed with frozen sweet potato fries for ease), a ground beef loaded sweet potato, a high protein Mexican breakfast plate with jammy eggs, and more.
